Recipe for Punch Drunk Love
This Valentine’s Day themed cherry chocolate stout is pretty straight forward. I used the clone recipe for Young’s Double Chocolate Stout from the Brew Your Own magazine, but added 3 pounds of pureed cherries in secondary. Also we’ll be experimenting with adding rose water once it comes off.
Ingredients:
- .5 oz Light DME
- 4 lb 2 oz Light LME (late)
- 8 oz 2 row pale malt
- 11 oz crystal malt 60 °L
- 13 oz chocolate malt
- 12 oz lactose
- 8 oz invert sugar
- 4 oz cane sugar
- 6 oz cocoa powder (late)
- 1 tsp Irish moss (late)
- 1/8 tsp yeast nutrients (late)
- 2 oz 86% cocoa chocolate bar (secondary)
- 3 lbs cherry puree (secondary)
- 7 AAU Fuggles hops, 1.6 oz at 4.2% (60 min)
- 1.25 AAU Kent Goldings hops, .25 oz at 5% (15 min)
- Wyeast 1318
Steps:
- Steep grains at 155 °F for 45 minutes
- Sparge
- Add DME and sugars
- Boil
- Add Fuggles
- With 15 minutes left, add Kent Goldings, LME, cocoa powder, Irish moss and yeast nutrients
- Chill
- Pitch yeast, aerate
- Ferment at 68 °F/20 °C
- Add cherries and chocolate (melted in double boiler) in secondary
